MMMMonday is yummy today!

Today's simple and easy MMMMonday recipe is adapted from this one at Kraft Canada, with some minor modifications to keep it gluten free ... (I've eliminated the bread crumbs and doubled the parm!)

Easy Broccoli Cottage Bake

1 container (500 g) 1% cottage cheese
1 pkg.  (300g) frozen chopped broccoli, thawed, well drained
3/4 cup grated Cheddar Cheese Light, Old or Medium
1/4 cup  roasted red peppers, well drained, chopped
4 eggs, beaten
6 Tbsp.  each: Kraft 100% Parmesan Light Grated Cheese

MIX all ingredients until well blended.
POUR into 9-in. pie plate sprayed with no stick cooking spray.
BAKE at 350°F for 45 min. or until centre is set. Let stand 10 min. before cutting into 6 slices to serve.

More variations on the theme:

substitute 1 chopped tomato, 1/2 diced onion, 1/4 cup chopped black olives,1 cup of chopped fresh spinach for the broccoli and replace the cheddar cheese with feta to make this a Greek Supper

You can also use fresh broccoli, or cauliflower in place of the frozen!

Thanks for posting this low carb recipe. It can be challenging to find new recipes without all the flour and pasta as a base.
